Chickpea, Eggplant, Mushroom & Tomato in Sauteed Arugula
Pretty much what it sounds like. Pan-fry eggplant in olive oil, then add mushrooms, tomato, garlic powder, crushed red pepper and fresh thyme and oregano. Add chickpeas and arugula and sautee with a little bit of veggie stock. Top with vegan or regular parm as you wish. ENJOY!
